Canan is the founder/executive editor of http://www.colyak.web.tr . Gluten is a protein found in wheat and also in a number of other cereals including oat, rye and barley. If you have coeliac(celiac) disease you need to avoid foods made from these cereals, including most types of bread, pasta, pizza, pastry and cakes. Wheat ingredients are used in many foods, such as some sausages and burgers, over the counter ready-to-eat meals and many sauces. Foods in batter or breadcrumbs are not suitable for people with celiac disease either. If you have coeliac disease, always check the ingredients on the foods you buy. You will also need to avoid some alcoholic drinks made from barley, such as beer and lager and some medications containing starch. Gluten-free products do not contain gluten, but they may still have other proteins found in wheat (albumins, globulins and starch granule proteins). So these might not be suitable for people who are intolerant or allergic to wheat. It is important to understand that products labelled wheat free are not the same as those labelled gluten free. Some foods labelled as gluten free will contain small amounts of gluten. This is because some of these contain a special starch that has been treated to reduce the amount of gluten in it and it’s impossible to remove the gluten entirely. Some foods are naturally free from gluten, including potatoes, maize and rice. These are good sources of starchy carbohydrate for people who need to eat a gluten-free diet. Fruit, vegetables and unprocessed meat and fish don’t contain gluten, but some processed meats such as sausages and burgers are made with cereals that contain gluten. Dear Christine Sorry to hear about your daughter! My friend has a daughter too; who had started to have siezures at the age of 2!(She is 7 now) It took 2 years for the doctors to find out that she has Landau-Kleffner syndrome (LKS) ...This is very difficult to diagnose... Interesting part for us is about my friend; she has just diagnosed with celiac disease (She is 40 years old) So, I read a lot about being celiac and having seizures but Landau-Kleffner syndrome (LKS) is very rare... Small intestinal biopsy is considered the most accurate test for celiac disease. Small intestinal biopsies can be obtained by performing an esophagogastroduod enoscopy (EGD). During an EGD, the doctor inserts a long, flexible viewing endoscope through the mouth and into the duodenum. A long, flexible biopsy instrument then can be passed through a small channel in the endoscope to obtain samples of the intestinal lining of the duodenum. Multiple samples usually are obtained to increase the accuracy of diagnosis. A pathologist then can examine the biopsies (under a microscope) for loss of villi and other characteristics of celiac disease such as increased numbers of lymphocytes. Small intestinal biopsy does however, have some limitations. For example, acute viral gastroenteritis and allergy to cow's milk or soy protein can cause abnormal small intestinal biopsies that are indistinguishable from celiac disease. However, acute viral gastroenteritis is not easily confused with celiac disease because of the difference in the acuteness of symptoms. (Acute viral gastroenteritis has a sudden onset of symptoms and last only a few days.) It is however, easier to confuse cow's milk and soy protein allergies with celiac disease. Despite these limitations, small intestinal biopsies are recommended even for individuals who have abnormal antibody tests for celiac disease. First of all please consult your doctor. If he/she does not suspect any other related or non- related conditon for the weight gain then start to keep a diary. Write down everything you do and eat all day long! I mean every little detail... After a week work on the log...Find out how long or much you exercise, what and when and how much you eat... gluten free does not mean salt or sugar free! just as non celiacs, they make you gain weight...  (Apr 7, 2008 | post #24)
