Author states she uses Spelt flour, doesn't that contain gluten?

Yes! Spelt is WHEAT, it does contain gluten and it is dangerous to celiacs. This author makes a number of strange statements, like the one about snack cakes, or the one about sodium, or the one about mostly following a gluten-free diet. Either you're gluten-free to control your celiac disease or you're not - it takes micrograms of gluten to make a celiac react.(and perhaps the writer should also learn about lactose intolerance...) |
