With a very thin knive 'drill' eight holes on the meat and fill them up with a pre-elaborated mixture of
coriander
salt
balsamic vinager
garlic
<whispering> bacon
a few drops of honey (yessss, TRD, honey..!!)on each hole drilled

Coriander, isss ... is like 'highest quality' oregano ... isn't it..??

Sumac is good for the looks ... it doesn't taste any special. An Arab friend's wife prepares an onion salad which basically is sumac, lemmon, salt and olive oil... I don't carry sumac..

What about cuminum (kamoon for us)..?? Adds to the natural tastes of food ingredients ... and there are many stories about the healthy benefits of it..

Tell you what...I have injected some weird zhit into pork and marinated my fish in buttermilk but you'd have to drug me and threaten my family to get me to wet a ribeye. Dry rub with kosher salt and pepper, a little garlic rub...MAYBE...then right to the grill. I won't even try to pan--broil a ribeye, I have that much respect for the cut of meat.(and you know how I feel about the potential pan sauce)

We always maintain a Simon & Garfunkle section of the garden...parsley, sage, rosemary, thyme. And that is where The Paragon (my lady) allows the Club Car to leave the tracks with several different varietals of each. Seriously...pineapple sage? WTF? And dry spices have become a storage problem since we disagree on how long to keep them. I think she enjoys the shopping WAY MORE than the cooking or eating.
