If you're going to substitute meat, you're better off with Tofu. A two ounce serving of SPAM has 15 grams of fat (23% US Daily Value) including 6 grams of saturated fat (28% US Daily Value), and over 170 calories. It also contains nearly a third of the recommended daily intake of sodium. Whereas a 3 ounce serving of Westernized Tofu has less than 12 mg of sodium, 7 grams of fat and is cholesterol free. The homemaker in the article would be better off substituting SPAM and Ramen (which also has well over 800 mg of sodium per package) with Tofu as it also a versatile product and a much better choice for her family.

I agree with Fitty that we need to scrutinize the nutritional content of all processed meat more carefully. The two women quoted in the article have at least taken care to include fresh produce in their meals.

Oh well !

A good test of those who claim they are or were raised poor is " Have you eaten SPAM ?".

I'm sure not all poor have eaten SPAM but surely the majority has .

BTW, During WWII it was about the only meaty type food readily available.

Chopped green peppers, chopped onions, diced potatoes, diced Spam. Fry it all together and you get Spam hash. This was a staple in our house in the 1950's. Sometime we'd have it everyday for a week. Saturday was franks and beans with brown bread. The bread came in a can, it was a lot worse than Spam. Saturday sucked, besides the beans which I didn't like it was bath day for us kids. Had to heat the water on the stove because there was no running hot water. Cold water flat is what they called our apartment.

It is true that a lot of Spam went to the troops but the dish you are referring to (SOS) is something else.

Creamed chipped beef on toast is made from dried beef. http://allrecipes.com/Recipe/Creamed-Chipped-...

The secret to enjoying this dish is to eat it before it cools off. Great with a couple of eggs.

The Navy preferred minced beef on toast.
