Was just visiting a plantation outside New Orleans, Louisiana. They said they had ice cubes in the 1830s. How on earth did they do that...?

Ice houses. They would cut up frozen ponds during winter and store the ice in a ice house insulating the ice with bails of straw or some other material. The ice would keep for use during the summer. Generally it was only the rich who could afford to have ice houses.

Ice cubes were actually used around 1000 BC by the chinese!
