Zucchini Bread
2 cups shredded raw zucchini 3 eggs 1 3/4 cups sugar 1 cup vegetable oil 2 cups flour 1/4 teaspoon baking powder 2 teaspoons baking soda 2 teaspoons cinnamon 1 teaspoon salt 2 teaspoons vanilla 1 cup chopped walnuts
Put zucchini in strainer and press or squeeze with hands to get excess liquid out. Beat eggs, sugar, and oil together. Add flour, baking powder, soda, cinnamon, salt, vanilla, and walnuts. Mix together by hand. Add drained zucchini. Mix well. Pour into 2 greased and floured loaf pans. Bake 55 to 65 minutes at 350°, or until a wooden pick or cake tester inserted in center comes out with very little cake clinging to it.

Reese's Peanut Butter Bars
1 3/4 C Graham Crackers {Crumble}= 1 Package 3 1/2 C Powdered Sugar 2 Cubes Melted Butter +(3 Tbsp for melting) 1 C (*Reese's) Peanut Butter 2 12 Oz Packages Milk Choc Chips 1/2 C milk
In bowl combine graham crackers crumbs, sugar, 2 cubes melted butter, and peanut butter. Mix thoroughly. Pat firmly into a 9 X 13 baking dish. Set aside. Melt MILK chocolate chips, 3 Tbsp butter and milk in a double boiler, pour mixture over your crust, chill and cut into bars!

Oh i love that bread! I don't care for sweets,but this is the exception! I am hungry now,dag nabbit!

I know this Jello recipe sounds strange,but my Grandma Bea made it every Thanksgiving! 2 versions:
Lime Jello Make as you are supposed to add fruit. Dice up very tiny:, 1/4 cup of yellow onion 1/4 cup of Celery/add a few tops chopped in there for decor,lol Optional: 1 Tablespoon of pimentos(they add color,not much taste) In other words,it's a festive salad with a bit of sweetness from the jello. Put it in little seperate molds and serve along with dinner as a salad,try it,it's really good. You can also add chopped fine walnuts.

Other version: use Cranberry jello and you can add cranberries(dried and or a few fresh and follow the same recipe as above for the lime jello.

This one is yummy when you're craving both sweet and salty!
Jello Pretzel Salad (not really a salad at all) lol
1st layer 1 1/2 Cups crushed pretzels 1/2 C Sugar 1/2 C melted butter
Press into a 9 X 13 baking dish. Bake at 325 for 6 minutes and cool.
3rd layer 1 Large pkg. strawberry jello 2 Cups hot water 2 pkg. small frozen strawberries
Dissolve jello and strawberries. Let jell slightly and ad to second layer, Chill.
*Top with your favorite nuts (optional) Walnuts or Pecans are best!
2nd layer 12 Oz tub Cool Whip 8 Oz Package of cream cheese
Whip together until fluffy, spread over the cooled pretzel layer.
Enjoy!!=)

Love this for the fall --
Butternut Squash Ravioli with Prosciutto & Sage 3/4lb butternut squash 1 1/2 tsp butter 1/8lb diced prosciutto 1 1/2 tsp fresh sage, chopped 1/2c heavy cream 1/8c grated parmesan 16oz pkg wonton wrappers 1/2c chcicken broth cornmeal/salt/pepper
375'- Split squash in half, scoop out seeds. Place face down on cookie sheet and brush with oil, salt, pepper. Bake 35 mins. When cool, scoop out meat and pulse in food processor to a fine chop. Saute' butter 2 mins. on med-hi. Add prosciutto and sage - cook 2 mins. Reduce heat to low. Add 1/4c heavy cream and half of the cheese. Reduce by half, season with salt and pepper. Cool. Lay out a few wontons - place 1 1/2 tsp of squash filling in center. Brush edges of top wonton with water and press to seal and eliminate air pockets. Place on cookie sheet dusted with cornmeal (can store 2 days in refrigerator). Simmer broth, cream and rest of parmesan on low 8 mins. Cook ravioli in boin=ling water 2-3 mins. Serve with cream sauce.

mojo's stuffing
2-3 cups of stuffing bread or two boxes of stove top stuffing
1 apple chopped up (or) 1 cup of applesauce 1/2 cup of chopped celery (i use the parts you wouldnt put in other holiday cooking) 1/2 cup chopped onion 1 carrot sliced or shredded 1/2 can chicken broth 1/2 of vegtable broth and i always add the juices from olives ,any canned fruit cocktails or the fruits packed with juices. that are being opened for other holiday dishes.(i use the other 1/2 can of the chicken and vegtable as my basting for the turkey.)
heat all the liquids broths and the vegtables and fruit togather in pan bring to boil and let simmer for few minutes add bread cubes and let sit for 5 minutes on stove with burner off. or you can put this stuffing in the bird and let it bake/roast while bird cooks.
If you baste your turkey use the juices and water from your cans of olives,fruitcocktails, mushrooms,as your basting sauce with a can of chicken & vegtable broth as well.
we use roasting bags with our turkeys and this gives the gravy great flavor.
my mom purees all kinds of stuff for her bases for her stuffing .... fruits vegtables onion olives,nuts. you neame it it goes into the stuffing.

yea my mom and i both put all kinds of stuff in our stuffing mom puts nuts in theirs too im not a nut fan so i leave them out. my mom has always used the fruit cocktail juices in her jellos stuffing , the turkey basting , gravy ... it does make it tasty and it isnt that sweet cause the turkey juices and bread soak it up. my mom rarely uses water when its called for in recipes its always some sort of juice pr puree of fruits and juices or broths when she cooks.
