I thought I would share with you the cassarole we eat on Christmas morning. I am not going to use a breakfast sausage this year. I plan on using an apple wood sausage.
Do-Ahead Casserole
1 LB. PKG. breakfast-style spicy sausage 1 C. chopped onion 1 C. chopped bell pepper 6 slices of white or wheat loaf bread, cubed 6 eggs 1 1/2 C. low-fat milk (we drink whole so that is what I use) 1 C. shredded sharp cheddar cheese salt and pepper to taste.
Crumble sausage in a non-stick skillet and cook over med. heat; stirring frequently. Add onin and green pepper to sausage and cook until sausage is done; drain. Spray 2" deep 8x11 casserole dish that can go from refrigerator to the oven. Place bread cubes in bottom of pan. Sprinkle sausage mixture the bread. In a large bowl whisk eggs and milk until combined. Salt and pepper to your taste. Pour egg mixture evenly over sausage. Use a fork to press the sausage and egg mixture into the bread, until the bread is moist. Sprinkle the cheese evenly over the top. Cover with plastic wrap or foil and refrigerate over night. Bake uncovered at 375 degrees for 40-55 min., or until lightly brown, puffy and the eggs have cook through. If top begins to brown to quickly, cover with foil for the remainder of the cooking time. Let stand 10 mins. then serve.

I like this b/c it can be done the night before then just popped in the oven that morning while opening gifts.

Back before Thanksgiving, someone asked for a good sweet potato casserole. Sorry I didn't see the comment in time for Thanksgiving, but maybe you can use it for Christmas.
This is the best sweet potato casserole I ever had, and now since I've made it, everyone wants me to bring it! Easy, sweet and yummy!!!
PECAN SWEET POTATO CASSEROLE
4 Cups Mashed Sweet Potatoes 1/2 Cup Sugar 1/2 Cup Milk 1/3 Cup Margerine (Melted) 1 t Vanilla 3 Eggs
Preheat oven to 350. Mash sweet potatoes, then blend in sugar, milk, vanilla and eggs. Blend in margerine last and mix thoroughly with an electric mixer until smooth.(Will be pretty thick.) Pour mixture into a greased 9"x11" baking dish.
Topping: 1 Cup Brown Sugar 1/3 Cup softened Margerine (stick works best) 1/2 Cup chopped Pecans 1/3 Cup Flour
Combine brown sugar and flour, then cut in margerine until mixture is coarse crumbs. Stir in pecans then pour topping over sweet potatoe mixture.
Bake at 350 for 30 minutes or until topping becomes crunchy. This recipe makes 12 1/2 cup servings.

I don't use the green pepper. No one here likes them. The boys would like for me to put jalapenos in it. Hubby would die. He can't eat spicy foods.
