This simple dry rub works well on pork, beef or chicken. The meat can be cooked immediately, or for a richer flavor refrigerate 2 to 4 hours before grilling.

exactly what is says, Expresso coffee that is finely ground. Easy to do with whole expresso beans and a coffee grinder. My guess is that expresso is used for the deeper richer flavor, but I can't see why a more normal coffee cannot be used. You want something fine, not the coarser grind normally used for making coffee.
