Ava's right, Jack. I knew what she meant. At a certain point in the season, you can't give the stuff away! I am going to bring some to Sam, and I just found a recipe for chocolate zucchini bread so I'll be making some, and probably freezing some as well. I've already picked and either given away or cooked about 30 zucchinis, and most of them have been as long as my forearm! It's amazing how these buggers grow! I've got 3 bags of chopped zukes in the freezer already.

your garden looks great this season lynne. i have the same poblem with cukes. can't pickle, eat or give them away fast enough.

linguine with zucchini and tomatoes 1/3 cup butter or margarine 1/3 cup onion, chopped 1 green pepper, seeded and cut into strips 4 ounces linguine, cooked and drained 2 to 3 cups sliced zucchini 4 medium tomatoes, peeled, seeded and cut into strips 1/4 cup parsley, chopped 1/2 cup shredded Gruyere or other Swiss cheese 1/2 cup freshly grated Parmesan cheese Melt butter in skillet and saute onion for about 5 minutes. Add green pepper and cook a few minutes more. Combine with remaining ingredients reserving a few tablespoons Parmesan cheese for top. Place in buttered 2 quart casserole and top with Parmesan . Bake covered at 350 degree for 30 to 40 minutes , or until cheese is bubbling. DO not .overcook

I hear you Lynne , one day the zukes are tiny and the next day huge.This year has really been good for growing.You have a larger garden then I do.Who does all the hard work of weeding?
