yeah I am behind the last three days have been long busy ones. I had two funeral since Thursday so no fun and not much cooking.

It's the weekend and time to step past the healthy eating zone for a couple days and make a few fat-laden goodies.
Tonight will be homemade old fashioned Hamburgers and Crispy onion rings.
Hamburgers (makes about 4-5 hamburgers)
10 oz of sirloin steak tips 9 oz of beef short ribs
In food processor, grind together sirloin steak tips and beef short ribs, using short pulses (about 10-12 in two small batches). If you place the meat, in a single layer, on a dish and freeze it for about 15 minutes it will make the process easier. You may have to remove any pieces of fat or gristle that didn't grind. Pat out the patties don't try to make them rounded, overworked and perfect cause if you do you will make a tough hamburger.
Cook on one side for 3 minutes (use a bit of oil) then turn and cook the other side for one minute. Serve on a toasted bun with all the fixins.
Onion Rings
Cut a firm, large yellow onion into approximately 1/2 in. rings.(Or more if you have a big crew to feed).
Dip in the following batter:
1 1/3 cups all-purpose or rice flour 1 teas. salt 1/4 teas. pepper 1 tablespoon melted butter 2 beaten egg yolks
Add gradually, stirring constantly: 3/4 cup flat beer
allow the batter to rest covered and refrigerated 3-8 hours.
Dip onions in batter and deep fry until golden brown (I always use Peanut Oil for deep frying since it has a higher burning point)
Chocolate cupcakes from the back of Hershey's Cocoa can.

Note: left out one step. Cut sirloin and beef short ribs into one inch chunks before putting them into the freezer (leave space between them) Just in case anyone wants to bother to make a very good hamburger.:-)

What are you making for valentines day. I am grilling steaks, twiced baked potatoes, broccoli and cheese sauce Chocolate fondu with fruit and pound cake. Used 3 hershey bars and 1 can of eagle brand milk for the choc sauce.

I'm going to make a dish called Taco Casserole. I have 2 slightly different recipes for this. Both from those little cooking magazines you buy at the news stands. One Pillsbury and the other Betty Crocker.
Pillsbury:
1 lb. lean ground beef 1 can (15-16) oz. chili beans in sauce, undrained 1 can (8oz) tomato sauce 1 pkg.(1.25)oz. taco seasoning mix 2 cups coarsley broken tortilla chips 8 med. green onions, sliced (1/2 cup) 1 med tomato chopped (3/4) cup 1 cup shredded Cheddar or Monterey Jack cheese (4oz) additional tortilla chips if desired
Heat over to 350. Cook beef over med high heat until throughly cooked, drain. Stir in beans, tomato sauce, and taco seasoning mix. Reduce heat to med. heat to boiling, stirring occasionally.
In ungreased 1 1/2 to 2 qt. casserole, place tortilly chips. Top evenly with beef mixture, Srpinkle with onions, tomato, and cheese.
Bake uncovered 20 to 30 min. or until hot and bubbly. Arrange additional tortilla chips around the edge of casserole.
We have had this before and really liked it.
Here is the other one.
Betty Crocker:
Taco Casserole
1 lb. lean ground beef 1 can, 16oz. chili beans in sauce, undrained 1 can, 8 oz. tomato sauce 2 tablespoons of taco or picante sauce or salsa 2 to 4 teaspoons chili powder 1 teaspoon garlic powder 2 cups coarsely broken tortilla chips 8 med. green onions, sliced (1/2 cup) 1 med,. tomato, chipped (3/4 cup) 1 cup shredded cheddar or monterey jack cheese
Heat oven to 350. Cook beef till done, drain. Reduce heat to med. Return beef to skillet, stir in beans, tomato sauce, taco sauce, chili powder, and garlic powder. Heat to boiling over med. heat, stirring occasionally.
Place tortilla chips in a ungreased 1 1/2 qt. casserole. top with beef mixture, sprinkle with green onions, tomato, and cheese.
Bake uncovered 20 to 30 min. or until hot and bubbly. Arrange additional tortilla chips around the edge of casserole if desired.
4 servings
45 grams of carb per serving, 595 calories
We have not tried this one. Really similar though.

I just made a great cake - here is the recipe: In a bowl blend the following with a mixer: 2 mashed bananas 1/2 cup applesauce 1/2 cup plain yogurt( or sour cream) 3 eggs 1 tsp vanilla Blend in on low speed 1 box of either yellow or white cake mix. Mix until blended. Stir in 2/3 cup choclolate chips Pour into a bundt pan - sprayed with Pam. I made a strussel topping using 1/2 flour 1 cup Oats 1/2 tsp cinnamon 1/2 brown sugar 6 tbl cold butter Put in food processor and process until crumbly, Pour on top of cake before you bake it; Bake 350 for 45 minutes until done Cool Turn out onto a plate. Glaze: 2 cups Powdered sugar a little water until mixed well and thin enough to drizzle over cooled cake. It is so good.

Dad, cake sounds delicious. We had family over for dinner so I cooked up a big pot of spaghetti & meatballs, salad & garlic toast. Dessert Strawberry Shortcake Unsweet/Sweet Tea fresh slices of lemon Kool-aid with fresh slices of oranges

It was. My wife and kids LOVED it. I had made the strussel and put it in the freezer for later use - it came in handy and sure made the cake so much better. When you turn it out the strussel is on the bottom but you still get the flavor. You can taste the Banana flavor, the vanilla flavor, the chocolate chip and the strussel flavor seperately - but then it just melds together into one taste as yo u eat it.

catfish hushpuppies I went to Moorehouse to Front Street Market they have great fish on Fridays, you can get plates and eat there but we only get the fish and hushpuppies, they were so good..

I haven't made them, but any recipe I remember seeing calls for cutting up flour or corn tortillas and baking or frying them. Have you tried on line? Tonight, salad, homemade spaghetti and meatballs, garlic bread.
