I am not sure either.
They study the scripture in Latin. The mass, and other rites are given in Latin. Wouldn't Latin be easier if practiced regularly amongst themselves? Maybe it is only spoken to other members of the order.
Another point, since all novice Priest take studies in the Latin language, but not necessarily of the Italian. It could serve as the universal language for them.
Just a thought I really don't know.
