The hot in chile, whether it is green or red, fresh or powder is the best part of Southern New Mexico... The hot is known in medical literature for its capacity to pump up the immune system and especially for removing cancer... the hotter the better. Very hot capsicum is considered one of the best anti-carcinogens available, the only reason it is not promoted or prescribed, to my knowledge, is because it can't be owned... anyone can grow chile. Do the research, look it up...you may think that watching people sweat, and talk about how hot their food is -is crazy... But their immune system is loving it. Think about it..In light of what is allegedly happening world wide with the flu... hot, hot chile for building your immune system, is the best thing you could be doing for yourself... along with more sunshine for vitamin D and normal hygiene. You have everything you could ask for to stay healthy right here in Southern New Mexico... I put up about 100 lbs of Barker Green(Hot) from Joe Lujan's Farm every fall. What is the best way to eat chile? Fresh, green, unroasted, chopped and put right on top of your food... Loads of vitamins, minerals, and all those anti-carcinogenic properties... Yippee! Obviously fresh green isn't available year round and that is what is so wonderful about chile... it works whether it is fresh or powdered... as long as it is hot! So, start acquiring that tast for chile.. it could be the best thing you'll do this tear. I love it.

This is a pretty good article, considering the author says his favorite salsa is from E2. Quote, "It has a good, fresh taste and some zing. The level of heat varies from day to day, but it is always good and spicy, never bland. The E2 salsa is between thick/chunky and watery. "
Nice story, would have been good for the Sunday edition, but it adds a little volume to the weekly "business magazine" that the Sun throws together. This one should be in your portfolio since others under your byline (that are supposed to be about the state of the economy) are full of statistics that don't show anything other than a lack of skill using cut, paste and sort in excel. Or maybe the business editor isn't so good with calculations. But talking food with the people running successful enterprises shows potential.
For what it is worth, I'm having some salsa verde this morning with my eggs. Living in Southern New Mexico + Needing some green or red daily = Chile addiction

I really wish that I had the recipe for the salsa they serve at THE PINK STORE in Palomas! Ever since the murders started (and the USA got picking about the passport thing), I quit going. However, I do miss their salsa!!
I still have friends that go... maybe they can buy me a gallon next time they're down there?

Thank you, locals, for your delicious salsas. Usually I make my own, but I always love trying other flavors.
