My kids are on a float trip and they are pickey, so I think I am going to make some of those peppers and your nacho thing. Tell me what's in it!!

You layer chips in the bottom of a casserole dish and then black beans, chopped onions, chopped tomatoes, jalapenoes, chopped squash or zucchini, mushrooms and shredded cheese and then do another layer of everything. bake until everything is melted and hot. You can really throw in whatever veggies you have and add chopped chicken or steak if you have leftovers. I heat the black beans (from a can) in the microwave before I layer them to make sure they get done. It is super easy. I put purple and green onions. It's never the same twice.

It's quiet at my house. Son is out of town so just me and J at home. He went ahead and went on his trip, even w/ his broken foot. Not sure what kind of beach/golf vacation that will be!

When I got home, J broke the news to me that my porch cat, Charlie, had died Saturday. I was so sad. He doesn't know for sure what happened to her. She was in the grass in the front yard. Maybe hit by a car but no visible injury. And she never went into the street.

We thought about it while we were on our FAB5 reunion. We just joked and said...Hey, we should just move..and here we are. We had several places in mine and Bearhog came up with this one and I looked at it and liked it. So here we are in Italy, TEXAS. Can't wait for everyone else to join us.

So we had such a great trip to LR! Laughed and stayed up all night every night. Nearly peed in our pants many times. Ate at lots of good restaurants - you would have liked that Rem. I had great walleye tuna w/ a blueberry sauce of some sort - delicious! And a flatbread pizza one night. And grilled shrimp ka bobs at Flying Fish.

All of that sounds good. I probably won't cook too much this week. My son is out of town. Plus I had enough food for a couple of more days.

I think I'm gonna boil the shrimp and steam some of my candy corn to go with my spinach salad. The spinach salad only has mushrooms, eggs and pecans in it. I didn't feel like frying any bacon and it doesn't need it anyway. I love poppyseed dressing on my spinach salad. The corn is so good steamed for about 4 minutes it doesn't even need salt or butter.

I'm gonna bake a cake this week and take up to Wilson to Harrison for his 50th birthday. He leaves Friday for another 4 months and his b'day's not til Sept 6th but he'll be gone then. I'm also looking for a book on sickle cell as a gag gift for him, I think yall all know that story. He's kinda down this week getting ready to leave.

During the rest of the month you'll enjoy being with people who know you inside out, and with whom you share a strong bond. You'll also want to be more forthcoming and emotional than usual, and may find yourself involved in heartfelt conversations and really intense exchanges. At times you may feel rather exposed, but it's important to open up emotionally right now.
