If there was a restaurant that was all grilled cheese all the time, I would be in heaven. Especially with dozens of different configurations to mix it up a little. Ungh.

Not being American, I am always searching for the open-faced grilled cheese & tomato sandwiches that I grew up with. Does anybody make them like that here?

My Mom's secret to grilled cheese: thin layer of butter covering the bread, and BROIL THEM IN THE STOVE. Watch closely! When one side is complete, flip and repeat. Watch closely!

They come out perfect every time, non-greasy, and you can do multiple sandwiches at once.

But watch closely! It only takes seconds to go from nicely browned to black.

Some of us are cooking for the first time in our lives in this economy, so I think the Trib is running these articles, this and the pancake one come to mind. Why not get a laugh out of it?

[I use two eggs in my pancake recipe, not one.]

All the politicians are lying, some as blatantly as Blago and Burris, but to quote Training Day, 99% of what you read in the paper is BS.

Some of you need something stuffed in your mouths - why not make it grilled cheese?

Kraft...illlllll. I haven't had a decent grilled cheese sandwich since they took "Old English Cheese" off the market. Man! That was the best!

The cafeteria at Northwestern Memorial Hospital has great grilled cheese sandwiches at a great price. Add soup and you have a great combo. But my personal favorite is a grilled ham and cheese sandwich. Same thing just add a little ham...yummy! Kosher pickle and chips...COMPLETE!

The trick to making an adult grilled cheese sandwich is using garlic butter to butter the bread and adding fresh herbs to the cheese.

I went to the grocery store two days ago with one purpose: find bread, butter, sliced colby jack cheese, and campbell's tomato soup. I am happy to report that for dinner I grilled cheeses with tomato (and even went in for seconds). And just in case you were wondering, yes, it was delicious.

Sandy - I think Oak Tree cafe at 900 N Michigan does the open-faced sandwiches you're looking for.
My fav to make at home is with sourdough bread, pepper-jack cheese, and tomatoes. YUM!

Vegetarians must be aware of rennett that is part of the cheese. Many brands derive from the stomach lining of slaughtered baby calves. A soy cheese sandwich can be very satiating.

Sorry, anything toasted cannot be considered a grilled cheese. Nothing worse than ordering a grilled cheese in a restaurant and getting a non-buttery, barely melted toasted cheese sandwich. I'm talking to you, The Counter on Diversey.

Oy! An $11 grilled cheese? Home made bread and Butterkase (?) Cheese? Ugh. Do I come into your kitchen and make Bouillabaisse with canned tuna? Grilled Cheese is cheap white bread and cheap yellow cheese. Don't dress it up.(By which I mean RUIN IT.)

This article is worse than the one where the writer whined that he didn't like the forks at some diner.

I'm a traditional fan, but did find a favorite in Chicago. At the Bar on Buena in Buena Park (also have a great selection of beers!) They serve pepperjack cheese with fresh guacamole and sliced tomato on Texas Toast. Delicious! And easy to make at home.

I hate the gourmet versions of regular guy food. That's the same as a $30 beer...
