I worked at Sibley's and honestly I liked it at first. That was until Charlie kept changing the procedures. It was so confusing everyday. The place is really busy all the time and that was probably the only good thing about it. I was extremely mad when one day I called up there and I was told I wasn't on the schedule. Of course, the next week I called again and was told the same thing. I was never officially told I was laid off and I think that was a really bad way of handling the employees. The only thing I was told was, "I will call you when we get busy again." I'm sorry, but why don't you just tell me I'm laid off so I don't keep wasting my time and calling! Plus, I think it's better that I got laid off because I didn't particularly like working for a drunk that would call the restaurant and yell at us because we didn't answer the phone, when in fact he was so drunk that he was dialing the wrong number. I'm not saying Sibley's is a bad place. It has wonderful people working there, the food is good, and it's very fast paced, but some things, like with Mr. Sibley, and the way the business is ran, needs to change!

Wow, I googled Sibley’s for a menu and I got this blog. It is not the best PR for the business or its employees. I'd be concerned with what is posted on the internet because anyone can read it and have negative effects on the business.

Anyways...my opinion for what it’s worth...I don't really care for Sibley's BBQ because Sibley's does not care for the environment. Styrofoam plates and cups are not acceptable for the environment and I will not patron Sibley's because of this fact.

I wonder what your other "excesses" are? Those who nit-pick at small stuff usually are the worst offenders.

Sibleys is ok. Lets face it...just ok. It is not Buzz n Neds, it certainly is not Stameys in Greensboro, NC. It is just ok. Not a great value, but service is great. So get over it.
It is just ok. Would you take your boss to dinner there?

charlie is a good dude to work for so long as you work while your at work. To the former employee I'm pretty sure that no one held a gun to your head and told you to fill out an application and if there was such a problem in the kitchen why didn't you take the initiative and try and change it. I don't know why your so angry about working there. One of the beaners is gone so only a couple left to get rid of.

I totally disagree, I ordered food for 30 relatives that never have ate at Sibley's for a small party today and the BBQ was so dry and taste like it was days old. That I was so embarrassed along with the chicken that was raw. I procedded right away and called to speak to the owner but this young lady kept telling me he was not in nor did he return my call. I will NEVER visit again. Maybe the owner needs to have more pride in his food and his customers. My next call in the morning is to see if the Heatlh Dept will listen to what I have to say.

Did you consider the employee's he is keeping and pay more are much better employees than you? Most likely they are low maitenance and dedicated employees who want to work. These type of employees are so much better when you are a manager.

Lazy, high maintenance employees (complaining all the time, brings in baggage from home, etc.), are not desirable employees.

Maybe you need to take a look at yourself...

How was the chicken raw that was served to you? Hickory smoking meat will leave areas that are still pink that doesn't mean the chicken wasn't cooked

Dry BBQ, under cooked chicken and syrofoam plates...and people think this is the best of chester....you all need to get out of town sometime and see what real food is all about!

I suppose you think Applebees is great too?

Bottom line is that you can make a lot of accusations out here and no one is accountable to anything. Sibley's is accountable to the laws of the land and if there are accusations, take them to the authorities. Then come out here and tell us about them. As a business owner myself, there are times when you have to make tough decisions and let someone go. Times are tighter now than in the past and I'm sure Sibley's feels that. There are more restaurants in Chester than ever. The moral of the story is that while you are being paid, work your freaking butt off. Make yourself indispensable. Get a good night sleep the night before on a regular basis (I've had losers who spend all night playing video games). Keep yourself clean and presentable and mostly VALUE YOUR JOB. Even if you can't wait to move on, don't burn your bridges. When you leave a place, give them a fair notice and treat them with respect. Work harder than ever your last two weeks so that the employer wishes you weren't leaving (that can cancel out a lot of mistakes). You never know: 1) if you will need them as a reference later on and 2) if you might decide you want to come back. Don't ever, ever assume either of the two are false. Be responsible, care about the business you work at and its productivity and good things will come your way. Even if they are forced to let you go, if you are a good worker, use them as a reference and usually they will give you an extra glowing reference because they felt bad about letting you go.
