I love the Gable boxes, I think they would fit in great for children's parties. Kids love boxes. Also they make great gift boxes for pastry and baking. Just a couple of ideals I have off the top of my head. I have to meet with a potential client this morning, I am not to sure about this person though. She constantly ask "HOW MUCH IS THIS"? and "HOW MUCH IS THAT"? I am a true believer, when you hire a caterer, you want your event prepared professionally. something like hm.. deconstructed black beans/w white rice on the bottom in a cylinder.. pack the rice/beans in a tower and then pack with whatever.

Your mom is right!!!! I love cooking with a passion, but wait until you start school my dear. You will find out it's not all about preparing meals. The first two weeks will be safety and sanitation, third week will most likely be learning how to properly hold utensil and identifying every item in the kitchen. Fourth week identifying different aroma's of spices,(spices can last forever). As my professor would tell me, You have to earn the right to master the kitchen before you can prepare a meal successfully. When you open your restaurant (which I know you will) your motto should always be: Not to meet your customers expectations BUT TO EXCEED THEIR EXPECTATIONS. |

i'm lucky that i got into a program that assists us with the business aspect of things. and they help us with the food handling licenses and they will even take our recipes and help us turn them into weight instead of teaspon/cup etc. this is only a commercial kitchen, i don't think they assist us with food courses, but i hate to be smug, but i really don't need it. i could use some courses on better 'knife' efficiency. but other than that i'm cool. lol the business aspect will be very helpful though. |

I understand fully, on the business aspect I studied and have a degree in Hospitality. What falls under the umbrella is Business Management for Entrepenuers, Purchasing, Food & Beverage, customer service, accounting and marketing. At the present time, I market my business on my own. I love the competiton, and I admire my own unique style. My husband and I brainstorm new ideas for our business on a daily basis. My husband is the quiet type, and at first he used to make me feel like he was not being supportive. Presently, I have to shut him up sometimes, every time he comes up with a clever ideal, he will call me right away. My plan is to continue catering for the next two years, afterwards, I plan to open a restaurant. My biggest problem will be the location. I really have alot of research to do. If I open in Harlem, I am not worried about competition, its the high priced overhead and rent.(NYC goes by sq ft.) The Bronx and Westchester, NY does not black american ethnic cuisine. The rent is manageable though. That is the only problem I am having. In addition, I have heard of horror stories in NYC, such as protection costs (if you know what I mean). |

wow.. protection costs.. are you serious? lol that's some sopranos sh*t right there. (not to make light of the situation, i just didn't know that really existed. i'm so naive at times) our rent here also goes by the sq ft so i know how that is. i think starting a restaurant featuring a type of cuisine that may not be familiar to an area would be an advantage. it could also backfire, but i doubt it. maybe there is not something in those two areas because people thought no one would like it. if you go there perhaps you can become the benchmark for that area. that's good you have your husband supporting you. that 'home base' is necessary to bounce ideas off of. i know the people around me are tired of me showing them logos or testing recipes or looking at boxes lol.. they have to be, hell i'd be tired of me too, but they're always supportive. even my mom is supportive and she hates everything i do. in fact, she's just hateful all around lol. she is the type of person who right before a trip will say something like, "i hope you don't get mugged and i get a call at 2am to come and identify your body found in an alley." gee thanks, bon voyage to you too mama, but even she has nice things to say lol. i am going to start at farmer's markets and select grocery stores in my area. i don't want my product to be mass produced so i want to keep things on an artisnal scale. eventually i want my own patisserie/bistro somewhere near me where i live now (or wherever i end up in a few years.. lol who knows where life takes us sometimes).. you'll do well, you have a good support system and a very mature head on your shoulders. i know you'll do good. oh, and yea, those gable boxes ARE cute. i was thinking of using them for preboxed gourmet 'lunches' to go or maybe packaging some of the pastries in them. i don't know what i'll use those boxes for yet, but i like them lol |
