Minnesota still food product development hotbed, but suppliers and retailers have joined the quest

In a high-tech kitchen at Cargill's new snacks and cereals lab in Plymouth, amid machines that puff and squash and clump ingredients in interesting ways, Jon Wiersum is armed to defy convention.

Only in the U.S. does one "invent" new foods, ignoring the fact that all food is basically a product of soil, water, and air. Combining existing foods into increasingly unidentifiable, energy-intensive, and over-processed muck is not what I call innovative - it's unhealthy and quite stupid. Using marketing gimmicks to get people to buy it is shameful. The reign of science in processing food is contributing heavily to the reign of sickly people and soaring health care costs.

It is the consumer's choice to buy the food offered by large corporations. Trends in larger companies are moving towards healthier innovations. Becoming healthier is the newest trend, this should be encouraged not disheartened.

Dan is too crabby. I think that innovation in all areas should be celebrated. Dan should grow himself some organic veggies and eat them in a corner in his basement. Dan sez "boo to progress".

Hey Dan, don't eat anthing that has been invented or made better by this research. I am guessing you would be dead from starvation in 3 weeks.

Brave new foodmakers. Hand me my gin & tonic please. Gin dissolves cholesterol. Quinine tonic for malaria.

Dan has obviously never lived outside the US, or else he would be aware that other countries and other cultures also "invent" new foods and new food fads.

E.g., those boxes of Pocky snacks you see in the grocery stores (the chocolate-covered pretzel sticks)? Invented in Japan in the early '70s.

I am not happy with Cargil. They own feedlots in the west that are deplorable, so when anyone does a write up on their achievements, and their accomplishments I think they had better look into where the food comes from. Tyson foods is another, deplorable. WE as responsible humans have to provide a food chain to prevent cancer and other life threatning illnesses.

Living in an urban area I imagine it is difficult for you to relate to the farmers just outside the 7 county ring. It's easy to take your recyclable bags to the organic grocery store and feel that you made a difference. Cargill makes a bigger impact on improving and enriching the communities they have a presence in. Do your research.

How are they improving a community with feed lots? You go for miles seeing animals wollowing in mud, urine and fecies, fenced in, and beyond you see thousands of acres of green grass, which is where they should be grazing. The billboard sign, says Cargill, that, my friend is not improving anything. I am saying our illness are born in our food chain, be it farmer or Conglomerats, the government is not doing their job. The FDA is lax. We need natural products.
